Here are some new recipes from our kitchen team to try out at home! Have fun trying them out, and enjoy your meal!

Apple and forest honey cake with pineapple sorbet

Sorbet:

110 g sugar
54 g glucose
1.5 g stabiliser
215 g water
500 g pineapple

  • Mix the sugar, the glucose and the stabiliser and bring to the boil with the water
  • Add the pineapple and liquidise
  • Pour into a sorbettière and freeze

Cake:

125 g butter
60 g forest honey
peel and zest of one lemon
3 egg yolks
3 egg whites
1 pinch of salt
125 g flour
1 pack of yeast
250 g diced apple

  • Beat the softened butter with the forest honey and the lemon
  • Gradually add the egg yolks
  • Whip the egg white to soft peaks with a pinch of salt
  • Fold in the flour, yeast and the apple to the egg whites and finally mix in the butter mixture
  • Put the mixture into buttered moulds and bake at 175° C for around 25 min.
